¾ tsp. salt
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. ground ginger
½ tsp. ground nutmeg
¼ c. finely chopped pecans
3 eggs-lightly beaten
4 Tbsp. butter-melted
1/4 c. packed brown sugar.
½ c. water
¼ c. brewed coffee
½ c. buttermilk (fat free)
Mix flour through pecans in large bowl. Combine eggs, butter, brown sugar, water,
coffee, and buttermilk. Add to dry ingredients. Mix well. Pour on greased hot griddle,
cook until done. Makes 8-10 medium pancakes.
Maple Pecan Syrup: Heat 2 c. maple syrup, ¾ cup chopped pecans, and ½ teaspoon
of cinnamon
